We shared our preserved lemons with some friends and it was a big hit. This time Shinobu is using Limes and "Finger Limes". The limes are preserved in salt and both the limes and the juice are excellent. The juice is extracted by the salt and can then be used in salad dressing and anything that could use a punch of sour and salt.
